"Sayonara Summer" Peach and Gruyere Grilled Cheese: This recipe is our farewell to summer. As a tasty sandwich, the "sayonara summer" brings together tangy sourdough, grilled peaches, peppery arugula, nutty Gruyere, and a simple brown sugar sauce. It is the perfect way to say "sayonara" to summer before the cool weather arrives in the Valley. This recipe serves 3-4.

 Ingredients:

1 sliced Prairie Flour Bread Co. sourdough boule (we recommend using the "Jed" or "Outlaw")

4 tbsp butter (approximate measurement - use enough to butter to sufficiently coat the sourdough slices for grilling the bread) Just remember to save 2 tbsp for the brown sugar sauce you'll be making later.

1 tsp natural sea salt

2 tbsp brown sugar

1 cup fresh arugula

2 large peaches

1 block of Gruyere (we use an aged cheese for a more earthy tone, but feel free to use a younger cheese for a more mild flavor and a creamy texture)

Directions:

1). Prep ingredients: slice bread, peaches, and Gruyere.

2). Grill peaches on BBQ-we grill ours over medium heat for 5-7 minutes. Take off BBQ and set aside until sandwich assembly step coming up later.

3). Butter sourdough slices and place them buttered side down on a preheat frying pan. We use cast iron pans because sourdough toasts perfectly with one, but any frying pan will work over medium to medium high heat.

4). Place sliced cheese on top side of bread and wait until the cheese is melted and delightfully gooey. Once cheese is melted and bread toasted to a medium golden brown, set aside and start the simple brown sugar sauce.

5). In a separate small sauce pan; mix together 2 tbsp brown sugar,  2 tbsp butter, and 1 tsp sea salt. Stir and heat over medium heat just until the mixture is no longer grainy and is hot. 

6). Now the time has come to construct this beast! Place several leaves of arugula on the melted cheese, top arugula with the grilled peaches, and finish the sandwich with a drizzle of the brown sugar sauce over peaches. Top with second slice of grilled sourdough.
